This knife was made by Jason’s son Kamui. The Prarie Gyuto is his spin on the Japanese gyuto chef’s knife. This 6” blade (10 1/2” overall) blends a slim gyuto profile with a more aggressive western tip. Forged from 1095 steel with a brute de forge finish and paired with a figured maple and purple heart handle for a secure grip that stands out on the rack. Compact but capable.
