The Kurogane
Made by Jason’s son Kamui:
Hand-forged from a reclaimed 5160 leaf spring, The Kurogane blends Western chef knife versatility with a Japanese-inspired profile, combining a long edge, refined low tip, and subtle forward belly for controlled push cuts, slicing, rocking cuts, and detailed prep work.
The 8.5” blade features a brut de forge finish and a subtle convex edge for improved food release and smooth cutting through meat and vegetables.
The 6.5” integral handle incorporates a reverse twist for enhanced grip flowing into a rear hoop that functions as both a secure hand stop and a hanging point for storage. The forged curl/guard extends slightly below the edge line and is intentionally designed to ride just off the board during use, setting a slightly forward cutting angle that favors controlled slicing and deliberate cutting strokes.
Hand-finished and sharpened on Japanese whetstones, it is paired with a spalted maple sheath for storage and transport and built as a durable, everyday-use kitchen knife.
